Holtefjell XO is a firm, dry, Norwegian washed-rind cheese made from pasteurized cow's milk at Eiker Gårdsysteri. This exclusive cheese has a rich flavor and excellent melting properties. Eiker produces all their cheese using their own milk, and Holtefjell XO is aged for a minimum of 12 months. It is an excellent substitute for Italian Parmesan.
