TINE® Norwegian Alpine Cheese is a flavorful, firm yellow cheese, made at the dairy in Elnesvågen, from cow's milk from farms around the Romsdal Alps. It has superb melting properties, making it perfect for raclette or in grilled cheese sandwiches. The cheese is matured longer, which provides an optimal balance of flavor and a good aromatic sweetness and richness. TINE® Norwegian Alpine Cheese is also fruity and has a long and pleasant aftertaste. The extended maturation also leads to the formation of tyrosine crystals (tyrosine is an amino acid from the protein in the milk), which can be felt as small salt grains that crunch a bit in the teeth when eating the cheese.
