Award-winning, aged hard cheese from Valdres, made from mountain farm milk during the summer months from cows grazing in the mountain pastures. Matured for at least 12 months. Bufar is a fatty yellow cheese with a rich, round flavor. The cheese has a delightful blend of salty, sweet, and nutty notes with mild freshness of milk. Bufar is very well-suited for sandwiches and can be grated and used for au gratin dishes due to its good melting properties, or cut into cubes as a snack. Bufar got its name from an old tradition where the cows were brought home from the mountain farm on 'bufardagen' (herding day). Bufar was awarded gold at the World Cheese Awards in 2018 and 2022, and received 3 stars at the world's largest food competition, Great Taste Awards in 2021, where it was also nominated for the Golden Fork.
