Avocado toast with tomato and spinach using Mills mayonnaise

Toast topped with creamy avocado, enriched with the flavors of spinach and tomato, becomes a delightful quick-fix meal. It's particularly delicious when complemented by the creamy texture of Mills mayo.

Ingredients

  • 4 slices of bread or (Whole Crisp Thin Spelt)
  • 2 avocados
  • 2 tomatoes
  • 4 tbsp Mills MAYO
  • 40 grams of spinach
  • 1 tsp chili flakes

 

How to make it:

  1. Toast the bread slices to your preference, either using a toaster for convenience or by pan-frying for a golden crust. (Alternatively, you can use Crispbread Thin Spelt (Grovkrisp Tynn Spelt) as a healthier bread option.
  2. Halve the avocados and slice them into fine slivers.
  3. Cut the tomatoes into thin rounds.
  4. Generously spread Mills MAYO on each toasted slice, then layer on the fresh spinach. Arrange the avocado and tomato slices over the spinach and finish with a light scattering of chili flakes for a bit of heat.
