Sumptuous Chocolate-Raspberry Pavlova Delight

Sumptuous Chocolate-Raspberry Pavlova Delight
This decadent pavlova pairs rich chocolate with vibrant raspberries for a delightful treat. Note: The chocolate cream should chill for at least 2 hours before use.

 Ingredients

  • Servings: 10
  • 6 egg whites, at room temperature
  • 250g sugar
  • 1 tsp vanilla sugar
  • 3 tbsp cocoa powder
  • 50g baking chocolate, melted
  • 1 tbsp potato starch
  • 1 tsp vinegar

 

Filling

  • 3 dl TINE® Cream
  • 150g baking chocolate
  • 5 dl Piano® Vanilla Cream

 

Topping

  • 100g fresh raspberries
  • 2 tbsp white chocolate, grated (optional)

 

Directions

  1. Preparation: Set your oven to 100°C (212°F) using both the upper and lower heating elements. Line a baking tray with parchment paper, drawing two 20 cm circles on it as a guide.

  2. Meringue: In a spotlessly clean bowl, whisk the egg whites with sugar and vanilla sugar until stiff. Carefully sift cocoa over the whipped whites and fold gently to create a marbled effect.

  3. Mix: Fold in vinegar and potato starch until the mixture is smooth and shiny. Add the melted chocolate and incorporate gently.

  4. Shape: Spread the meringue within the drawn circles on your parchment paper.

  5. Bake: Place the tray in the middle of the oven and bake for about 90 minutes, or adjust the time based on your oven's characteristics. The pavlova should be crispy outside and chewy inside.

Tips: For a crispier pavlova, extend the baking time. A fully crisp base can be stored in an airtight container for 2-4 weeks, while a chewy one should be consumed within a day.

  1. Make Chocolate Cream: Heat the cream to about 60°C until it starts to steam, then stir in chopped chocolate until melted. Cool for at least two hours.

  2. Final Cream Prep: Whip the chilled chocolate cream until stiff and fold in the vanilla cream.

  3. Assemble: Spread two-thirds of the chocolate cream onto one meringue base, top with the second base, and cover with the remaining cream. Garnish with fresh raspberries and grated white chocolate.

  4. Repeat the final decoration step to ensure a beautifully presented dessert.
