Holli Mølle Wholemeal Fine Emmer Flour is a gently stone-ground organic flour made from ancient emmer varieties grown in Norway by local farmers who are fairly compensated for their crops. Each bag is labeled with information about where and by whom the grain was grown.
Emmer flour has moderate baking strength — its gluten network is elastic but less tight than wheat. This makes it especially suitable for slow-rising doughs, such as sourdough or long-fermentation baking. Wholemeal means the entire grain, including the bran, is milled, giving a flour rich in fiber, minerals, and nutrients. However, its baking properties are lower than sifted flour, so mixing with lighter flour may give better results.
