Glattost is pasteurized, made from cow's and goat's milk, with added cream, and waxed before packaging. The flavor is mild, sweet, smooth, and rich. Heidal's brown cheese, or raudost as they say in Heidal, is perfect for the traditional Norwegian lunch. Stir a little brown cheese into oatmeal or game sauce, or use it with ice cream, waffles, or in bread dough. You can also spread some lefse with butter, brown cheese, and crispy cured ham, and serve as finger food in fine rolls.
