Munkeby is made by the monks following a traditional recipe from the Cîteaux monastery (France). It is washed by hand daily during a seven-week maturation period. The cheese is cellar-aged on spruce planks and turned daily. The cheese has received several awards, including super gold at the Cheese World Championships 2018 in Bergen and in the Cheese World Championships 2023 in Trondheim. The cheese has a round and creamy taste with a lot of aroma and a long aftertaste.
